Red - Cabernet Noir (2/3) & Cabernet Blanc (1/3)

Fruit from Bee Tree Vineyard, East Sussex.

Partially hand destemmed, fully crushed by feet.
Spontaneous, open top fermentation.
12 days on skins, gentle punch downs daily.
Pressed into old French oak with a small hydro press.
6 months on full lees, bottled 1/4/22.

Nothing added... Just grapes.
