Partially hand destemmed, fully crushed by feet.
Spontaneous, open top fermentation.
12 days on skins, gentle punch downs daily.
Pressed into old French oak with a small hydro press.
6 months on full lees, bottled 1/4/22.
Nothing added... Just grapes.
